Is VirtueUpload Pro capable of automatically converting uploaded documents to PDFs (or another file format) so that all incoming documents include both the original file as well as a PDF file?

That is not (yet) a feature of VirtueUpload. It can be build of course. Remember that you will need a lot of server RAM memory to generate big PDF's.
